Hạt dẻ luộc chín bóc bỏ vỏ. Dùng máy xay nhân hạt dẻ và cho 1 muỗng canh nước vào xay thật nhuyễn mịn. Sau đó, cho phần nhân hạt dẻ cùng 100g đường vào chảo xào (như xào nhân đậu xanh) đến khi hỗn hợp nhân sền sệt lại là được.
Với 1 bát bột nếp ta cho 1/2 bát nước và trộn đều hỗn hợp bột cho mịn và không dính ta là được. Nặn bánh trôi nhân hạt dẻ, nặn hình tròn hay hình thoi tuỳ bạn. Nặn xong, cho vào xoong nước đã sôi để luộc bánh, luộc đến khi bánh nổi lên mặt nước thì ta vớt bánh ra.
Cho một bát to nước cùng, 15g đường, 1/2 muỗng canh nhân hạt dẻ và 1 củ gừng thái chỉ nhỏ vào nồi và nấu trên bếp.
Khi nước sôi ta cho bánh trôi nhân hạt dẻ vào đun trong 1 phút và tắt bếp.
