Xôi xéo là một trong những món ăn sáng rất quen thuộc đối với những ai sinh ra hay lớn lên ở Hà Nội. Món xôi này vừa tinh tế vừa hấp dẫn, mà lại rất dễ làm. Cùng thử nhé!
Chuẩn bị nguyên liệu. Ngâm gạo và đậu xanh vào nước lạnh ít nhất 3 giờ đồng hồ (hoặc tốt nhất là ngâm qua đêm). Hành lá cắt lát mỏng.
Cho 1 muỗng cà phê bột nghệ vào gạo nếp đang ngâm, để nghỉ 15 phút trước khi bắt đầu nấu.
Đổ nước đi, tráng qua gạo và đậu xanh, thêm 1/4 muỗng cà phê muối vào cả hai rồi cho vào chõ hấp. Chuẩn bị nồi hấp: đổ nước đun sôi vào nồi, đặt gạo và đậu xanh lên 2 tầng của nồi và hấp với lửa to khoảng chừng 15 phút.
Sau đó dùng đũa đảo qua gạo và đậu xanh cho chín đều, đun thêm 30 phút nữa.
Làm hành phi: Cho dầu ăn vào chảo, đợi nóng cho hành tím vào phi đến khi thấy hành phi màu vàng nhạt thì tắt bếp. vớt ra để riêng.
Sau 30 phút, tắt bếp, lấy đậu xanh ra khỏi nồi và xay nhuyễn. Sau đó nặn lại thành viên tròn
Lấy xôi ra khỏi nồi, cho lên chén hay đĩa tuỳ thích, cắt từng lớp mỏng đậu xanh phủ lên trên, rưới hành phi, vậy là đã xong. Thật đơn giản nhưng lại rất thơm ngon phải không nào.
